We started our year of travel by taking a preliminary trip to Japan with Carey’s younger brother. We got to celebrate Carson’s graduation, test out our travel gear, and explore an amazing country with direct flights from Denver.

There is so much to see and do in Japan, which can make planning a trip a slightly daunting task. We spent about 2 weeks there but could have spent 2 months without running out of amazing things to see.

In the end, we decided to spend time in Tokyo, the area around Mt. Fuji, Kyoto, Hiroshima, and Miyajima. Each area had its own personality and they were the perfect introduction to this fascinating country! We’ll definitely be back to explore some more.

Team Labs – the most creative museum I’ve ever experienced. If you ever venture to Tokyo, it is well worth the time.

As I’m sure no one is surprised, we explored a lot of delicious FOOD! 🙂

We waited in line for 2 hours for this amazing Michelin-starred Chashu Chuka Soba at Ginza Hachigou, complete with prosciutto, duck broth, and pepper caviar for ~$10. It was definitely worth the wait.

Carson found Wagyu beef.

We had a great time (and some great sushi) at a sushi train chain.

We discovered that if you find the right shop, kakigori is an enhanced Hawaiian Shave Ice. You do have to find the right shop – some shops sell versions that are more like large snowcones and are quite disappointing. We loved Asakusa Naniwaya’s kakigori. This is the lemon flavor.

Peanut butter kakigori (middle had tofu cream cheese and berries and was fantastic). Carson was a bit intimidated by the size.

We went to the famous yakitori street in Tokyo and had some delicious tofu and standard yakitori. The alley has 81 different restaurants and each fits about 8 people.
